Not a fairy tale about almond flakes that whispered to me the name of my future bakery. And not the family saga about me making cakes with granny in our old cozy kitchen. Yes, I absolutely love baking. But I love it like a personal wonder that flipped my life (and hopefully the lives of all Amsterdam’s sweet toothed citizens). Anna Almond Bakery Owner about us ALMOND’S STORY The story of Almond bakery is sweet but not sugary. I lost my job in the unforgettable 2020. Ta-da! In-between crying I came up with an idea to bake and sell cinnamon buns to pay my rent and keep the lights on. Friends told friends about my spontaneous entrepreneurship and here the unexpected happened – my future “Almond bakery” was booked for two weeks ahead. But wait. The problem was that flour (and butter, and yeast) were sold out due to the lockdown. I was hunting these ingredients all over Amsterdam to make sure my orders would be in place and then was delivering them in person, rolling my bag all over the city. Then, when I started to smell the first success… the landlord asked me to find another place to live and to bake as I “was overusing the oven”. A new place to restart my improvised bakery was the kitchen of the restaurant in the East of Amsterdam (many thanks to its owner for having me and all my cakes). Here “Almond” finally spread her wings and celebrated one month of work with an order of 8 Napoleon cakes crafted by only me, working through the night. I was happy, unstoppable like the new stand mixer, but also tired like my unfailing old spatula. After a vital vacation, I’ve faced that a 4 square meter kitchen has become too tight for me and my big plans, so I did once again what I hate – I moved. Now it was and still is, a spacious new kitchen! Here Nutties were born, here Almond’s Choco Bars started their expansion. Here I dared to dream about my own bakery in the center of Amsterdam; creating a team of true believers in the magic of flour and butter. And here the story of Almond Bakery does not finish but only begins. As I like to say, there is more in the cake, than we could see. Let me show it to you.
