When the cognac spirit has matured, it is transferred to a blending workshop. What does “blending” mean? It means mixing all the components of cognac – these are spirit, softened water, sugar syrup, and color. Finally, we get a product called the cognac of Ukraine. The House of Vintage Cognacs “Tavria” has its own magicians – the masters of blending. They follow the slightest details of creation and aging of good cognac… The main task of the master of blending is to make each blend similar to the previous one so that a consumer could recognize it. “It is easy to create fantastic cognac. All you need for this is your great grandfather, grandfather and father who devoted their lives to this” (Jean-Paul Camus). The masters who create cognac bouquets believe that one separate grape vintage cannot add necessary flavour and aroma to cognac. As blending, the mixing of cognac spirits of different aging time and vintage, is the most complex process in its creation. The quality of the product, its bouquet, its uniqueness is a complicated process … and it depends on the skills of a blender-technologist, who composes these cognacs of different aging time, and brings the drink to perfection. As a result, the cognac has its individual flavor and aroma, which are unforgettable, and the consumer wants to revert to them again and again. Further, at a processing workshop, the cognac goes through cold treatment at minus 15 degrees. Undesirable substances settle out. A ready blend of vintage cognac is set for rest and it is aged for 6-12 months depending on the cognac brand. In the course of this, the cognac gains harmonious flavour and complex bouquet. As soon as bouquets are ready, the barrels are drained. This is a miraculous process… Since it brings us closer to the creation of perfection.
