Today the trend in the restaurant business all over the world and in Ukraine is forcing restaurateurs to pay the greatest attention to the wines they offer. In the past several years, the culture of consuming alcoholic beverages, wines in particular, has matured considerably. As a result, it is no longer sufficient for a restaurant to limit their offer to a list of 30-40 wines dominated by wines from countries of the post-Soviet territory in order to satisfy the demands of a refined consumer. Today, the optimal number of wines restaurants should offer is in line with the European concept of 150-300 names. In world practice, the number of wines on the lists of elite restaurants fluctuates between 150 to several thousand names.
A classic wine list, as a rule, has wines from France, Italy, Spain and North America. The specific distribution of such wines by percentage depends on the concept of a restaurant’s cuisine, the prevalent taste of its patrons and other factors. In terms of numbers, classical Bordeaux wines dominate the wine list at the Empire Restaurant on the 8th floor of the Premier Palace Hotel. Nevertheless, the restaurant’s “prized possession” is wines from Burgundy.
A well drawn up wine list is an important factor for a successful restaurant. Compiling such a list can be done by independent selection of wines from suppliers without simply trusting the recommendations of strangers or representatives of wine trading companies. The Empire Restaurant chose for itself the method of looking ahead into the future wherein it purchases wine before it is even bottled and delivered to the retail market. With this aim in mind, an employee of the restaurant was sent on a business trip to France (Burgundy, Loirat and Champagne) where wines were selected directly at the producer’s. World restaurants conduct a similar practice whereby representatives of the best restaurants travel to the leading winemaking regions for degustation (taste-testing) and selection of wines.
Any first-class restaurant should have exclusive wines available on its wine list. This goal is achieved by directly ordering the wine from its producer through intermediary wine-trading companies of Ukraine. Here, terms are agreed to in advance with the wine trader to “not sell” the ordered wines to other restaurants and wine boutiques in Ukraine. This is precisely how the Empire Restaurant guarantees the availability of exclusive Burgundy wines in the selection it offers. Moreover, it guarantees that no other restaurant or boutique in Ukraine can make a similar offer of the series of wines on its list.
